Vegetable Mayonnaise Salad
Everyone knows and loves this classic Vegetable Mayonnaise Salad which has become an essential of many special celebratory meals in Austria. Even though it may be creamy and hearty, no Austrian buffet table should be without it as it’s a crunchy delicacy when made with fresh ingredients. We reveal the classic recipe from grandma’s cookbook!
- 600 g potatoes (diced)
- 1 carrot (finely chopped)
- 1 root parsley (finely chopped)
- 1/4 celery bulb (finely chopped)
- 5 gherkins (finely chopped)
- 1 onion (finely chopped)
- 100 g peas
- 100 g sweetcorn
- 250 g mayonnaise
- 1 tbsp vinegar
- 1 tbsp lemon juice
Directions for Vegetable Mayonnaise Salad
- Firstly, peel and finely chop the vegetables and cook until soft in salted water. Drain off the water.
- Mix mayonnaise, vinegar, lemon juice, salt and pepper and add to the vegetables. Now, blend everything together well and season the Vegetable Mayonnaise Salad with salt and pepper according to taste.
Live true to the motto, “homemade with love” and make your own mayonnaise: Simply mix 2 egg yolks with salt, pepper, a little lemon juice and some mustard and add 250 ml of vegetable oil. Stir until you have a smooth, even mixture.
