(Quark) pastries, or as we would say Topfengolatsche, are the perfect classic snack for on the go! You could almost think that they are too hard to make yourself as they can be easily bought from almost any baker but it’s well worth trying to make these yourself. To bite into a warm pastry fresh from the oven that you have made yourself is simply divine!

Ingredients

For the dough:

  • 250 g quark / curd cheese
  • 90 ml milk
  • 5 tbsp icing sugar
  • 1 pack of vanilla sugar
  • 2 eggs
  • 1 lemon (untreated, grated peel)
  • 1 tsp salt
  • 50 ml oil
  • 600 g flour
  • 2 packs of baking powder

For the filling:

  • 100 g butter
  • 750 g quark / curd cheese
  • 2 eggs
  • 1 pack of vanilla sugar
  • 150 g icing sugar
  • 2 tbsp cornflour
  • 60 g raisins (marinaded in rum)
  • 1 egg (for glazing)
  • icing sugar
  • seasonal fruits (optional)

Directions for Topfengolatsche

  1. To make the dough, stir quark, milk, sugar, vanilla sugar, eggs, lemon peel, salt and oil and then mix in the flour and baking powder. Place in the fridge and leave for 30 minutes.
  2. To make the filling, beat the butter until frothy and then gradually add the other ingredients. Finally, fold in the marinaded raisins.
  3. Roll out the dough, fold together twice, leave to rest again and then roll out thinly. Cut out 11 x 11 cm squares and place a little filling on each one.
  4. Fold in each corner of the square to the centre and brush with beaten egg. Bake in a pre-heated oven at 180° C/ 350 °F for approx. 25 minutes until golden brown.
  5. Sprinkle with icing sugar before serving.
