It only takes 10 minutes to prepare and then it goes in the oven – Brathendel, or Roast Chicken, is one of the most popular Sunday/festive holiday dishes in Austria. And it’s easy to see why as it is so simple to prepare. At the same time, it’s a dish which serves several people and looks rather impressive too: tender, succulent chicken meat with a crunchy coating.
For the Roast Chicken:
- 1 chicken (whole)
- 30 g butter (cut into small pieces)
For the marinade:
- 1 tsp paprika (sweet)
- 1/4 tsp thyme
- 1/4 tsp oregano
- 1/4 tsp marjoram
- a little rosemary
- a little oil
Directions for Roast Chicken
- First of all, thoroughly wash chicken and pat dry with kitchen paper.
- Mix seasoning in a bowl to create a marinade and rub into the inside and outside of the chicken.
- Pour a little water onto a baking tray (to a depth of approx. 1 cm) and place the chicken in this. Sprinkle over the butter flakes. Bake in a pre-heated oven at 170°C/ 350 °F for approx. 1 hour.
- To ensure that the chicken is nice and crispy, pour over the roasting juices several times during cooking.
- So to make sure the chicken is cooked, pierce with a skewer – if the juices run clear it’s done. Now all you need to do is serve and enjoy.

If you prefer particularly crunchy skin, switch the oven to the upper heat or grill function during the end of cooking.
For a long time, poultry was regarded as a Herrenspeise (food for the upper classes) and was also popular amongst the middle classes and farming circles. A famer’s table would only include chicken if the hen or farmer was sick.
