What is the most popular accompaniment for the famous Wiener Schnitzel or classic Backhendel (breaded fried chicken) in Austria? The classic Potato Salad, of course! It is the absolute favourite amongst the Austrian salads and is made with a warm marinade and enhanced with a little sugar. It tastes best if freshly home-made!



  • 600 g potatoes (waxy, sliced)
  • 250 ml beef stock
  • 60 g onions (red, finely chopped)
  • 3 tbsp (apple)vinegar
  • 6 tbsp oil 
  • salt
  • pepper
  • 1/2 tsp tarragon mustard
  • 1 pinch of sugar
  • 1 bunch of chives/parsley (to garnish)

Directions for Potato Salad

  1. Boil potatoes with the skin still on. Peel and slice whilst warm.
  2. Heat stock and immediately add to the potatoes.
  3. Peel and finely chop onions and season with vinegar, oil, salt and pepper. Stir until the salad has a creamy consistency.
  4. Season according to taste with mustard and sugar.
  5. You can enhance the salad by sprinkling over a few fresh herbs such as chives or parsley!
