The most classic Austrian accompaniment for bread and cold meats is Liptauer (a cheese spread) – a typical ingredient of any farm or wine tavern menu. Whether you choose to spread it on your bread or enjoy it as a snack with a salted pretzel, it is the ultimate snack delight amongst young and old.
- 1 onion (finely chopped)
- 1 pepper (red, finely chopped)
- 250 g quark / curd cheese
- 100 g butter
- 1 tbsp sour cream
- 2-3 tsp paprika powder (sweet)
- 1 tsp mustard (hot)
- 1 pinch of caraway (ground)
- capers (optional)
- gherkins (optional)
Directions for Liptauer Spread
- Peel and finely chop the onions. Wash pepper, remove stem and seeds and dice.
- Mix quark, butter and sour cream with the chopped vegetables and paprika powder and season well with salt and pepper.
- Add a little hot mustard and caraway to make it extra spicy.
If you want to create a more intense flavour, add finely chopped capers or gherkins to the spread.

Liptauer is regarded as being typical Viennese yet this popular bread spread doesn’t come from Vienna but elsewhere – the former county of Liptau in the north of the Hungarian kingdom which is today in Slovakia, in the High Tatra region. Although Liptauer has been reinterpreted, it would today be hard to imagine Austrian cuisine without it.
