  • 4 apples (slightly sour, finely grated)
  • 2-3 tbsp lemon juice
  • 100 g sugar
  • 1 pinch of salt
  • 3-4 tbsp horseradish (freshly grated – depending on sourness and taste)

  1. Peel, de-seed and finely grate the apples. Immediately drizzle with lemon juice to prevent the apples turning brown.
  2. Mix well with sugar, salt and horseradish and season to taste.

TIP

Alternatively, peel, de-seed and dice the apples and then steam, with the lid on the pot, until soft in a little water, lemon juice and sugar. Puree, allow to cool, and then mix with the horseradish, oil and salt.
